Danny Bozic - Award Winning Chef / Proprietor of Charter 1227 Restaurant in Salisbury.
Early in the 1990’s to pursue a career in catering Danny came to England from his home in the war torn country of Yugoslavia where he was a professional footballer and a shop proprietor.
He believes he has been fortunate in his time to work with some of the country’s greatest chefs in some of the most prestigious hotels and restaurants. He started with 2 years at Oxford Catering College before embarking on his formal training career at the Bear Hotel in Woodstock where under Head Chef Ian Morgan 2 AA rosettes were achieved. In 1997 Danny secured a place under the well respected chef Jonathon Fraser at the 2 AA rosette, 5 star Bath Spa Hotel which was hotel of the year. It was during his time at Bath that he married Joanna who is from Salisbury, having met her whilst she was Restaurant manager at the White Hart Hotel in Salisbury. In 1999 Danny had his first experience of a Michelin starred hotel at the Lords of the Manor Hotel in the Cotswold’s with chef John Campbel.
Danny’s first position as Head Chef then followed at the beautiful Swan Diplomat Hotel in Streatley-on-Thames where he was responsible for maintaining AA 2 rosette quality.
In 2002 he was persuaded by Jenny Copen-Gardner, renowned Johansson Guide Critic to take up the position of Executive Head Chef at The Blakeney Hotel in Norfolk. There he stepped into the shoes of Michelin starred chef Andrew McKenzie. Whilst at the Blakeney Danny secured the hotel’s first ever AA rosette.
In November 2005 together with his family Danny went into business in his own right by taking on the Barford Inn & Restaurant.
In his first year he won the Best Chef of the Year award in Excellence and then as he developed his reputation he was runner up in 2006 and 2007 in the Wiltshire Life Chef of the Year competition losing out only to Martin Burge of the 2 Michelin Star Whatley Manor and then to the executive head chef Hywel Jones of Michelin starred Luckham Park Hotel.
In 2008 Danny achieved his ultimate dream by opening his own restaurant in Salisbury by taking on the well established Harpers Restaurant in the city’s historic Market Square. Under the banner Charter 1227 Restaurant Danny soon secured a reputation for fine dining.
Unfortunately in March 2011 the Restaurant and adjoining properties were devastated by fire forcing closure for 15 months.
During this period Danny followed a varied path working for charities and helping other local establishments together with working for Lord Lansdowne at Bowood House Hotel AA 2 Rosette quality.
Considerable soul searching and effort lead to the
re-opening of Charter 1227 Restaurant with Danny taking the opportunity of moving up a step and together with a very professional and enthusiastic staff and his family now provide what many consider to be the best fine dining experience in the area.
